Total pie frustration

How the heck do you 'tent' a pie crust when it's browning too quickly without:
a) burning the bejezus out of yourself,
b) touching the perfect pie center and ruining it,
and
c) taking out ALL of the heat from the oven?

Please tell me.

Okay, the bad news is that you tent it before you bake it. sorry. I just sit it on a piece of foil and bring the edges up around it and cover the crust. I have tried making a tent out of the foil and sitting it above the pie, however, that has never worked for me. (hence the pre-baking prep) the coolest thing of all is going to a kitchen supply store and purchasing the $5 crust cover that looks like a burner cover with the center cut out. you can wait until you need it and then just sit it down on the pie or put it on before you bake. either way works fine. I know a "Martha Stewart-like" person in your immediate family (ahemmm, Shirley) who would probably be over-joyed to find one for your stocking... She has supplied most of the cool gadgets I have in mine. smile... I saw this cover when I was watching the Food Netword and writing down the recipe for the pie that won $1 million dollars in the pillsbury bake-off. I will make the pie for you when you come down sometime. Happy Thanksgiving to you all. I miss having you in my kitchen. My best Thanksgiving memories are centered around those times. Love you.
